The recipe will be back up soon…
- 2 1/4 cup Crushed oreos
- 1/2 cup chopped small pecans (or nut of your choice)
- 1/4 cup corn syrup
- 1/4 cup strawberry preserves (or could use cherry, or whatever preserves you like – this cuts through the sweetness)
- 3/4 cup powdered sugar
- 1/2 cup powdered sugar for rolling
If you bought whole oreos it’ll be about 28 oreos to make 2 1/4 cups of crumbs. Food process the oreos, then add pecans and process those. Then add the rest of the ingredients (except for the powdered sugar for rolling). If you do not have a food processor, you can crush the oreos with a knife (or put them in a bag and use a rolling pin) and then chop up the pecans small and add the rest of the ingredients. Then mix until combined. Then take a tablespoon (or so) and roll into a ball, then roll into the extra powdered sugar. Then voila – you have a *very* sweet dessert. We made these for a class yesterday and they were a huge hit. I found it sweet (I would cut down the powdered sugar to 1/4 cup or so), but everyone else seemed to like it and took seconds.
