Hello Virtual Cooking Class, I hope all is going well. Binyamin is 13 weeks old, Yaakov is helping return his fallen pacifier and giving hugs and kisses whenever he can. Nava is also helping, getting him diapers and wipes and playing with him and reading him stories. So, in the arena of “healthy” treats for the helpers – I want to make a peanut butter cookie.
I found a recipe from Paula Deen that has 3 ingredients – peanut butter, sugar and an egg. We’re trying those out today, I found a recipe for tagalogs (the Girl Scout cookie). However, I was hoping for a kind of energy cookie – that has protein and I would feel like our children are eating something good for them as well as being good tasting. And hysterically, as I was looking around for a recipe – I found a lot of recipes that had flaxseed flour and a bunch of other ingredients I don’t have around the house. So, I’m looking for a recipe that has ingredients I already have, and that I don’t have to go shopping for. Here’s the 3 ingredient recipe:
1 cup peanut butter (creamy or crunchy)
1 cup sugar plus 1/3 cup sugar (for rolling)
1 egg
I make my cookies small – so this made me about 4 dozen (but the recipe says 2 dozen). I mixed the 3 ingredients and then put them in the fridge to firm up. After firming, I rolled approximately 4 dozen balls. Then I did not roll them in sugar (I forgot) and I did not do the fork criss cross pattern. However, I did eat these up – they are delicious!
Anyone have a recipe for healthy peanut butter cookies they want to share? Take care, I’ll post other recipes as I try them.
