Hello! We needed a healthy and quick dinner last night so we pulled out some fish. We made a delicious easy, child friendly recipe with 4 ingredients! All parties ate the dinner (a not so small feat). The potato chips helped – and you can have little hands help crush them (put them in a zip lock bag, zipped tight and then everyone can not only help – but sprinkle on their own potato chips). As you might already know one of the secrets to getting people to eat foods they haven’t tried before is if they help in the making of the food – then it’s not so foreign. A friend of mine in Denver did this recipe originally (Esti Schwab) though her daughter made the “crust” with pistachios, and I would’ve used those if I had had them in the house. It was a toss up between rice crispies and the potato chips – and my husband said he’d rather try the potato chips. You could also try corn flake crumbs, if you have them.
Ingredients
- 8 fillets of Tilapia
- 1/4 cup of mustard
- 1/4 cup of honey
- Crushed potato Chips (1/2 a cup)
Directions:
Preheat oven to 425 degrees. Line a cookie sheet with alumium foil and spray with cooking spray. Lay out the 8 fillets. Mix the mustard and honey until mixed and then completely coat the fish on the top. Afterwards sprinkle the potato chips over each fillet -covering completely.
Put the fillets in the oven and bake for 5-7 minutes (until potato chips start to brown). Add some salad on the side and a side of corn and hooray! dinner for 4 is served. Although my children each ate 1 fillet, my husband and I ate 2 each – and I was hopeful that my children would eat 2.
